There has to be some good textures in there. So, maybe we start with a cheese as the base and build from there. I'll have a full range on salad, onion, tomato, rocket, cucumber then the pickles, onions and gherkins for a good taste mixture and texture and then two condiments; mustard and ketchup or pourable sunshine!

I have fond memories of fresh spinach leaves dressed in a Ricotta dressing, topped with loads of crispy bacon, freshly ground black pepper, on buttered granary bread, from the deli around the block where I used to live in central London.

They also makes the best avocado and bacon sandwich.

Happy days!

Sandwich fillings that I make myself are:

Chicken mayo with spring onions, toasted sesame oil and seeds.

Coronation chicken with sultanas, dried coriander leaves, toasted flaked almonds, lime juice or cordial, Pataks curry paste and mayo.

Egg mayo with butter.

Chopped ham, chopped gherkins, Dijon mustard and mayo.

Cream cheese and smoked salmon with a dash of lemon juice.

Corn beef and chilli mayo.

Tuna mayo with a dash of chilli oil and some chopped spring onions.

Bread has to be fresh, otherwise I'll have them toasted. I only keep white bread at home.

It has to be butter.

My favourite salad leaves in a sandwich are rocket, spinach or watercress, or a combination of all three.

I usually have a few radish, cherry tomatoes and a chopped Kiwi fruit on the side as part of my lunch.

No more sandwiches and salads until next Spring for me now that I have switched to autumn and winter food for lunch.

Ooo, how can I forget freshly made bacon or sausage sandwiches???!!!

Bacon has to be smoked streaky, fried till brown and slightly crispy, with Dijon or English mustard, fresh white bread, buttered, or toasted, no salad leaves.

Sausages can be anything that come to hand. Again, no salad leaves.

Redcurrant jelly is kept in the fridge.

I normally pick up heavily discounted pate on my weekly shop if available.
