Chicken thighs are super cheap around £1.60 (ish) for a pack of 6/8. Rice & broccoli add whatever flavour/sauce you want to the chicken.

If you can have chilli con carne although would it be a problem with a tomato based sauce?

That can make a few meals and I like to stuff peppers with the chilli and have that with some homemade wedges or roasties

"Spag bol is my kids favourite.

I use a food processor and blitz, carrots, onion, kale, courgette, peppers and any other veg I have knocking about. Fry to get rid of excess water. Then add the meat and then brown. Once that is done add 2 beef stock cubes, 2 bays leaves, 140g tomato puree cook for 3 hours."

It's not tomatoey and my kids eat it though they hate the jar version

That's true and nutritious too and can choose what to put in. Personally one if my favourite is a bouillabaisse and that's not particularly cheap if you use some good fish. Not everybody may like fish soup but I love it.

Chicken thigh kebabs.

Marinade..

Natural yoghurt (any kind)

Some curry powder

Cumin

Paprika

Salt

Pepper

Corriander.

Coat the chicken and let it marinade for an hour or so in the fridge.

You can either do individual skewers or strips or chop an onion in half as a base. Pop 2 skewers in and layer the chicken to make a big kebab.

The other half onion slice up and put on the tray around the kebab.

Bake slowly in the oven. Turning when required. The charcoal bits are my favourite.

Serve with salad and pita bread or whatever takes your fancy.

Old school stovies.

This was actually my childhood favorite so cheap to make too.

Sausages (any kind you like)

Potatoes

Onion

Salt, pepper, any seasoning you like.

Peel and chop the potatoes and onion.

Chop the Sausages in to 3s usually.

Throw in a big pot with water to cover.

Boil

Simmer it down to reduce the water

Mash a bit and serve!

It sounds gross and doesn't always look pretty but it's a filling one pot wonder on a cold day.

I use a brilliant website called simple veganista. Obviously you can add meat if you're not vegan. The reason I like it is. You can pick say almonds and it will give you every recipe with almonds in. Great if you have anything that needs using. Tells you how long things keep in fridge/freezer. Serving sizes. You can pop filters on for time you have free, amount of ingredients, dietary requirements and budget. Definitely worth a look.

Boiled rice (scramble an egg, glug oil into a pan, cook egg, fold in rice) for egg fried rice, maybe peas, chives, or other.

Roast sweet potato chips. Add salt, pepper, oregano, basil, smoked paprika, garlic, pinch of fajita 200-220 for 25mins turn once.

Noodles, spaghetti, pastas,

Mash - butternut squash, sweet potato, parsnip, maybe swede.

Soups - chicken/spiced/lemon (lots of veg)

From the above add sauces, gravy's, BBQ'S to meats and fish's, even sausage and beans, fish fingers, breadcrumb chicken drumsticks/gorgons with veg adds colour.

I throw in a tin of supermarket own brand chopped tomatoes as the kids don't like tomatoes but they can't tell.

"I’m trying to be organised and do a meal planner.

Can anyone give me some easy and cheap ideas.

Can’t include tomatoes, or cheesey sauces (fussy lot!)

Thank you "

Egg stir fried frice with whatever veggies or meats you want depending on taste e.g. spring onions, sweet peppers, chilli, mushrooms, sliced chicken, seafood... the list of possibilities is endless and brown rice is much healthier too. Cheap, nutritious, quick and easy.

"I am attempting a spinach pie today, use all that spinach and filo from the freezer. I bought lots a feta cheese to put in. Hopefully will all turn good and serve it with a nice salad. "

Made it, delicious. Recipe in the Favourite recipe thread for anyone who wants to try.
