We had trifle made by granma. She forgot the custard and cream. And she dosn't have a fridge - long story. So we really had mixed tinned fruit, with the odd lady finger in a sloppy jelly flavour sauce. That sounds so wrong!

Try the one and only trifle desert I ever need to make:

Make a base from broken ginger nuts soaked in brandy.

Open a tin of mandarin orange segments and keep some aside. Drink the juice and place the rest on top of the ginger base. Leave it to mature in the fridge overnight.

An hour or so before serving whip some cream and spoon it into the bowl on top of the fruit layer.

Smooth the surface and place 5 ginger nuts as rafts floating on the surface (one in the centre) and place the saved mandarin segments with a drop of brandy on each biscuit as decoration. Those biscuits will soften just enough by serving time.

it's a winner and works equally well with peach segments and Amaretto.
