I do this all the time. My best bargains where a chicken for 40p and two salmon fillits for 80p.

Egg and chips with a slice of bread and butter would work.

I haven't had ham, egg and chips for ages so I think that will be on the menu this weekend.

Lamb keema with rice and toasted pitta breads.

We use mutton mince from the butcher's at the market. Cheaper and more flavoursome than lamb. Tin of chopped tomatoes and tin of chick peas. Bulk out with some couscous. Spices from the stock cupboard.

ground tumeric

sweet potatoes,

red lentils,

coconut milk,

vegetable stock,

fresh spinach,

fresh lemon,

Rice,

Should squeeze a naan bread in there too for the budget.

Pretty much lived on this as a student!

29p for penne pasta

80p for butter

£1 for green pesto

79p for spinach

40p for sardines

Comes to £3.28

Boil the pasta, then drain once done. Sardines under the grill until they are golden. About 30g of butter intothe pan with pasta and mox until the pasta os coated, then a dollop of green pesto to be mixed in. Loosely chopped spinach leaves go in once the pesto is mixed and stir until the leaves have wilted down. Serve the pasta into a bowl and place the sardines on top

Now if i can cheat a little and things like seasoning can be used without adding to the budget. Lemon juice drizzled over the sardines and ground black pepper on top before going under the grill. And while mixing the spinach leaves in, some more black pepper and oregano goes in too

You end up spending half your life shopping like me! But yeah you make make great meals everyday on around £30 a week if you shop around , love cooking and have the right kitchen

Shakshuka.

1 Aubergine

Mushrooms

1 Courgette

Green pepper

Can of tomato

Egg

Spices cumin,paprika,cayenne pepper (I'll assume you already have the spices)

You can increase/decrease the ingredients to fit into the £3 budget.

Fry the sliced mushrooms and aubergines together. Let it cook,then chuck in the cubed courgettes to cook. Then chuck in the sliced green pepper.

Put cumin in the pan and let it fry for a few seconds. Put the can of toms cook for a few minutes, then make a well in the mixture to drop the eggs in. Slam on the lid and let the eggs poach in the liquid until ready.

I've thrown everything and anything in it. Spinach, salad, coriander, parsley on its last legs? Into the pot it goes. Old onions, bacon or leeks? Into the pot it goes before the mushrooms.

This is my end of week fridge clearer!
