Apricot or Raspberry and it has to be Mackays.

It is only now as an adult I can appreciate jam. Was never allowed as a child because I used to get covered in it, hair and everything, not sure how

We only had apricot at Christmas. Mum used it to stick the marzipan to the Christmas cake and we got to have what was left.

Soak your strawberries in your favourite gin for anything between a couple of days to a couple of weeks. Make your jam, and stir in some lime juice and some of the lime zest.

If you wanna get wild, finely chop a small red chilli into it too. You get a delightful post bite kick.

Bet the Gin tastes good after marinading the Strawberries for a few days, not done this yet but will earmark for next years Jam making sessions.will miss out on the chillies though.

I'm not really into cheap jam. You know the 'smart price' ones. They are sugar with colouring and jelly.

Jam , for me, MUST be HIGH FRUIT low sugar.... even then it's got tons of sugar in .. not that i'm dieting but jam is supposed to be conserved fruit..... fruit..

So .... in order ( marmalade would be number 1 but it's banned so )

1. Raspberry

2. Apricot

3. Pineapple

4. Ginger

5. Plum

6. Damson

7. Rhubarb

8. Loganberry

9. Blueberry

10. Spiced apple.

Love a good black cherry conserve. I really like a good apricot or raspberry jam too.

Wilkins & Sons usually do nice ones, but I’ve found some of the supermarket’s own ‘best’ ranges are great as well.

Marmalade….a nice bitter Seville orange with peel.
