Yes. A variety of ways would be useful. Sex, as you say. Distance as somebody else said. I would add by Fab friends too.

You can. Go to your ACCOUNT and then go on MESSAGE FILTERS.

You can select what sex, age, if people are verified, have photos and so on.

But you can't filter for all parameters you can choose, such as height, or block messages with under a specified length.
