One of the nicest sauces I do for pheasant and duck is a half pot of sour cherry jam and half a bottle of red wine. Boil to the consistency you like. delicious

Simply roasted, with garlic and herb butter over the skin, covering the breast with lots of bacon to prevent drying.

Enjoy!

South Devon

Pot roasting works well for Pheasant keeping it nice and moist.. Delia has a excellent recipe with cream and Cider.

Way over Yonder, that's where I'm bound

I used to make a port and cranberry sauce that worked well with pheasant if particularly well hung.

Last one we ordered on-line in a Tesco's shop and wasn't any bigger than a budgie think they plucked it straight from the egg.

It was defiantly a pheasant said so on the packet

I'd be tempted to make a pheasant stew. Joint it, and then just cook as you would a normal beef stew. Delicious!

Quite sure. Peasants normally shout a "right you are sir" as they tumble over the bonnet.
