Constantine. I enjoyed that show and they ended it after one season. So many other shows are far more deserving of being axed.

Agree with this. The brit lead actor was good. Should have had a second series.

As already said My Name is Earl and The Last Man on Earth.

Just read Final Space won't be coming back (just yet, there seems to be much more market for other companies picking up shows that others haven't renewed eg Community, Brooklyn 99, Arrested Development)

Sort of. I would have liked more however a happy ending would have been too cheesy.

St Austell

Brooklyn South - created by some of the same team behind Hill Street Blues and NYPD Blue...

....it was never going to be another Hill St, but had the potential to be the uniform/patrol equivalent of NYPD Blue...

....scheduled against Monday Night Football, however, it never achieved great ratings, and was cancelled after just one series...

My Name Is Earl springs to mind.

But honestly there are far more shows that should have ended much much sooner than they actually did. I've lost interest in lots of shows in the second or third season after having brilliant opening seasons.
