Pretty sure it’s the first one !

My younger days I spelled it 2-shay!!! Knew it was wrong but hadn’t a breeze the correct way

Touchet isn’t even a word

It’s spelt touché and the accent (‘aigu’ in this case) on the e determines how it’s pronounced. It’s certainly not touchay as it would be spelt touchè (accent grave).

However I’d be at a loss trying to tell you how to pronounce é (accent aigu) because of my own accent and the fact that I can’t pronounce English properly.

To the best of my knowledge, touchet only exists as a proper noun hence should take a capital t.

The t is not silent in this case. It often is at the end of French words but not here. It’s not pronounced like a t but it alters the way you pronounce the e in front. Et actually sounds exactly like é or ez or er.
