Pasteurised Mayo can be left out for years and be fine.

It's Pasteurised egg, its basically inert. Doesnt need to be refrigerated

As per instructions on the bottle, in the fridge after opening. I tend to make my own these days though. That definitely goes in the fridge.

I couldn’t find any sauces when I was cooking for C the first time…searched every cupboard. Had to give up and ask and they were all in the fridge

I’d never heard of this concept - well other than mayonnaise of course but red sauce …what is this wizardry
