Secret hideaway in the pennines

Having worked in kitchens s a chef, I have some a few different ingredients in my cupboard aside form the usual herbs and spices and flavourings.

Things like liquid smoke and tamarind paste which I use quite often

What weird and wonderful ingredients have you got stashed in you cupboard
