"We are struggling for inspiration on what to cook today. Hoping that the forum can share what they usually do with chicken to give us some new ideas? Usually we end up making curry / enchiladas / fajitas etc. It’s just too samey and it’s time to be a bit more adventurous. Help us please? " If going curry I like to make a butter chicken curry with pineapple to bring out a nice sweetness to it. Or could go for homemade kebabs and get lots of veggies and side dishes with it like salads, or even quiche. Or a good old cream of chicken pie is always a winner, with leeks and maybe jam hock in too. | |||

Place the thighs diced chorizo, 1/4 cut potatoes and diced red onion into a baking tray and splash a bit of oil over the potatoes and thighs. Cook for about 20 minutes then add a glass of wine to the tray and cook for another 40 mins or until the potatoes and chicken is cooked and the skin is crunchy" I make something similar but also add olives and peppers, its lovely. | |||
