"Tomato soup before I start night shift"

If you like tomato soup and enjoy cooking, butternut squash makes an excellent base for it. We dice a whole squash and sautee with onions and garlic, then add 500 ml pasata and a tin or two of tomatoes, a dash of tomato puree, chicken or veg stock cube, a little sugar to taste, salt and lots of black pepper and some basil.

Simmer it on the hob or stick it in the pressure cooker for 15-20 mins until the squash just melts into the soup then blitz in a blender. Sometimes we add some spicy chorizo with the onions at the start or some smoked paprika just to give it a little something else. Cayenne works well too. The hardest part is peeling and de-seeding the squash but it tastes fab and can be batch frozen to provide 6-8 meals.

250 grams of mince low fat, mix in, 3 tablespoons of soy sauce, 1 table spoons of chopped garlic, ginger and chilli. Subject to taste and heat, 1/2 a chopped onion, black pepper. Let it absorb for 20 mins or so. Fry in a skillet, wok or frying pan then when nearly down add three tablespoons of sugar to sugar. In mean time cook up brown rice in another pan (I cheated and used microwave brown rice)

When the meet is glazed and all fat cooked off, add in chopped spring onions, and green been. At some chillies for taste with some more soy sauce: then when veg is all cooked, serve brown rice with the meat mixture

Really easy to cook!!!!

The chicken stew was fab and what's left has been frozen in portions for another time.

Tonight it's pizza pie with salad. I'll roll out a sheet of puff pastry add a layer of a simple tomato and basil sauce then add toppings of red onion, pepperami, cheese, peppers, chillies and whatever else I might fancy later. Top it with a second sheet of pastry then seal the edges carefully and bake.

Basically any other mince recipe. Most pure would simple burger. Don't press meat together too hard. Pre salting for 15 minuted helps meat to stick together better.
