My fave recent one has to be What we do in the Shadows. Also love Mighty Boosh and various things Reeves and Mortimer have done over the years (incl Bob's Athletico Mince podcast). Father Ted and Blackadder are absolute classics. Someone mentioning Curb your Enthusiasm has made me want to start watching that all over again.

I absolutely adore Derry Girls, as my Dads from the City and I’ve visited several times, so I get the humour.

Phoenix Nights, I’m originally from Bolton and been to clubs that are (scarily) very similar.

If I could only watch one episode of a comedy for the rest of my days though it would be the final episode of Blackadder Goes Forth.
