A Cheesy Thread

I read today that the fantastic Halloumi cheese from Cyprus has been given 'protected status' by EU meaning similar cheeses from elsewhere can't use that name.

So simple questions, what's the best cheese or your favourite? And how do you like to cook or eat it?

My top 3-

Red Leicester

Halloumi

Manchego

I’ve never tried Sophie’s Choice is it a blue cheese

For me

Extra mature cheddar

Stilton

Feta cheese with olives.

I love cheese! They are all good for different reasons. Some because of how they melt, others because the don't. Some for their strength others for their subtlety.

Last cheese was a mature gruyere.

And I now have a thing for goats cheese.

Top tip - goats cheese and smashed garden peas (Petit pois) .... Mix them together in a bowl.

That is a good tip. Often have goats cheese with home grown salad in the summer.

I'm vegetarian so that is chippy heaven for me. Love mushy peas although I'm a Southerner.

Tartiflette with more reblochon cheese than is strictly necessary.

Or raclette with (surprise, surprise) raclette cheese or taleggio and mini roasted new potatoes, gherkins, steak, various crudites. And toasted sourdough.

Or a panko breadcrumbed halloumi burger with fresh tomatoes, lambs lettuce and cucumber.

Macaroni cheese with at least four cheeses (some type of cheddar, taleggio etc) and a side salad to cut through some of the heavenly richness.

And a shootout for cacio e pepe - simple with a good pecorino romano.

No point saying cheese without reminding myself of my love of it in recipes.
