You need to cook it for longerYeah your probably right I have the same issue with beef also .."

Low temp slow cook beef and mutton or any tough meat. You have to season the meat and rest it for a day or 2

This is a myth IMO, slow cooked mutton is much nicer than lamb. When I make a Dhansak I use mutton and cook it for 4 hours it’s so much nicer than lamb
