Diagonally Parked in a Parallel Universe

I've done loads of baking, most of which got taken into work or shared with friends (when we were allowed to meet).

Sausage rolls are quick and easy, but I like to do different flavours such as: venison & red wine, Aberdeen Angus & sweet chilli jam, pork with apple, pear & sultana chutney and at Christmas I made man-sized pigs in blanket sausage rolls with cranberry jelly.

I've also made Cornish pasties, cheese scones and fruit scones and I've made my own lemon curd to use in tarts and in a lemon cake.

Other cakes I've made include: a 6-layer cake for Pride week at work, lemon drizzle & orange drizzle, chocolate ganache, red velvet, carrot cake, Sarawak layer cake, Black Forest gateaux, Simnel cake topped with home-made marzipan, peach upside-down cake with caramelised brandy glaze & Chantilly cream, cherry Bakewell cupcakes with Limoncello frosting, strawberry gateaux St. Honore, Maple syrup-glazed banana & choc-chip cake, and a giant Battenburg.

Cheesecakes include: Key lime, mint & chocolate, white chocolate & raspberry, and Lotus Biscoff.

Biscuits include: rye & almond shortbreads, Amaretti, raspberry Amaretti, chocolate Florentines, salted chocolate, walnut & orange cookies, honey oat cookies, and peanut butter cookies.

Other stuff includes bread loaves and bread rolls, rough-puff pastries with toffee apple slices, and chocolate profiteroles.

I'm crap at cooking, though!

Is there something in the air? Mr Racer isn't usually much of a baker, but I've not been very well and I got a new stand mixer for my birthday. He's baked the last 2 weekends

I'm not complaining! I think he just wants to get me to eat something, and play with the new gadget

I love baking, although I changed to keto and low carb in the summer and had to learn a completely different baking method. There have been a few disasters, I have to say, but I've mostly got the hang of it now.

Yes! I love to. Today I made cheese scones.

I often do cupcakes of all varieties, I have to drop them at friends doorsteps - there’s too many calories otherwise

No. This one looks like a normal circular sponge. Orange in colour but plain, no nuts or cream. Covered in chocolate glaze.

It would work depending on the motion circles would work for creaming butter and sugar. A little more vigorous for the eggs and flour and flavours just to add air to make a, light fluffy consistency.

Nah, if it’s coated in silicone it might withstand high enough temperatures. Maybe best not to engage in destructive testing though and just use some elbow grease instead!
