Good idea for a thread OP

I'm sick of the same stuff and always trying to mix it up in the kitchen but im scared I'll give myself food poisoning lol

Mince minces?

Do you mean like a recipe that uses mince?

Because it’s pretty basic, but an old one. Basically if you make up a chilli con carne to your taste/ heat etc...

But instead of serving it with rice boil a few potatoes whole, skin on or off depending on preference. Then once cooked and cooled grate over the top of the chilli in an oven dish with knobs of butter and grated cheese, salt and pepper and bake until golden/crispy.

Tasty alternative to rice.

Also one of the best ways to cook mince is the Tom kerridge method.

Baking tray spread out into a layer seasoned with a very small amount of olive oil and baked in the oven. The mince goes lovely and golden, is healthier and tastier.

Southern Style Chicken Wing - I've done these, they are delicious:

1 tsp. sunflower oil

450 g chicken wings

Creole Seasoning

3 tsp ground paprika, 1 tsp ground black pepper,

½ tsp cayenne pepper

½ tsp each of dried thyme and oregano

Basting Sauce

4 1/2 tbsp. ketchup

2 tbsp. clear honey

1 tbsp. cider vinegar

1 tbsp. Worcestershire sauce

For the Blue Cheese Dip

37 1/2 g Stilton cheese (or other tany blue cheese) rouhly crumbled

50 g soured cream or half fat creme fraiche

1 1/2 tbsp. mayonnaise Celery sticks, to serve

Preheat the oven to 200°C/(180 fan) Brush a large baking tray with oil.

Put the chicken wings on a board and, using a sturdy set of scissors or poultry shears, cut off the wing tips. Next, cut through the main joint between each part of the wing to give too meaty pieces.

Place all the chicken wing pieces in a large plastic food bag or bowl and sprinkle with the Creole seasoning. Toss the chicken in the seasoning until lightly coated.

Scatter over the baking tray and cook in the centre of the oven for 20 minutes. Turn the chicken with tongs and cook for 20 minutes more. While the chicken in cooking, making the basting sauce.

For the basting sauce, put the ketchup, honey, vinegar and Worcestershire sauce in a bowl and stir until thoroughly combined.

Take the chicken out of the oven and pour over the sauce. Toss the chicken to coat in the sauce and return to the oven for 10 minutes more.

For the blue cheese dip, mash the cheese with a fork in a bowl with the soured cream and mayonnaise until almost smooth. (For a smoother sauce, blitz with a stick blender).

Spoon into a serving dish and put on a platter with the celery sticks. As soon as the chicken is ready, transfer to the platter and serve hot.

Not mince, but has to be one of the tastiest meals I've cooked, a bit of a faf but soooo worth it!!

Moroccan Lamb Tagine

1 tablespoon olive oil

300g diced lamb

1teaspoon paprika

1/4 teaspoon ground turmeric

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/2 teaspoon ground cardamom

1 teaspoon salt

1/2 teaspoon ground ginger

1 pinch saffron

1/2 teaspoon ground coriander

1medium onion, halved then cut into wedges

2 carrots - quartered, then sliced lengthwise into thin strips

3 cloves garlic, minced

1/2 tablespoon grated root ginger

1/2 lemon, zested

250ml chicken stock

1/2 tablespoon tomato puree

1/2 tablespoon honey

Place diced lamb in a bowl, toss with 2 tablespoons of the olive oil, and set aside. In a large resealable bag, toss together the paprika, turmeric, cumin, cayenne, cinnamon, cloves, cardamom, salt, ginger, saffron and coriander; mix well. Add the lamb to the bag, and toss to coat well. Refrigerate at least 8 hours, preferably overnight.

Heat 1 tablespoon of olive oil in a large, heavy bottomed pot over medium high heat. Add 1/3 of the lamb, and brown well. Remove to a plate, and repeat with remaining lamb. Add onions and carrots to the pot and cook for 5 minutes. Stir in the fresh garlic and root ginger; continue cooking for an additional 5 minutes.

Return the lamb to the pot and stir in the lemon zest, chicken stock, tomato puree and honey. Bring to the boil, then reduce heat to low, cover and simmer in oven at 160C for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender.

If the consistency of the tagine is too thin, you may thicken it with a mixture of cornflour and water during the last 5 minutes.

I've always wanted to cook like this, I just feel as though id mess it up and waste the money id spent on ingredients.

Go for it, it's essentially a slow cook one pot meal, not much can go wrong. I do it with couscous, so boiling water, stir and leave to expand. One tip with the couscous is to swap the water for chicken stock, tastes so much better

Use shoulder of lamb, or neck of lamb, they are a cheap cut and taste best for slow cooking.

Made some rice and used mince meat with tomatoes sauces garlic onions blackpeppers and some salt , was okay probably could done better

Yes please try it; I have many other recipes for various types of meats.. You can use a deep fryer or Dutch Pot... Experiment with the seasoning if you feel adventurous.

Italian meatballs in spicy sauce.

meatballs

500g minced beef

2 oxo cubes

1 tsp mixed herbs

1 tbs tomato puree

finely sliced onion

sauce

1 tsp oil

3 peppers, I like red, green and yellow

1 chili pepper

650g mushrooms

2 onions

half a clove of garlic, or a couple of teaspoons of dried minced garlic

carton passata

3 oxo cubes

To make the sauce chop all the veg finely, fry off in the oil. add passata, mixed herbs and oxo and simmer for at least half an hour.

While that sauce is simmering away, make the meatballs

mix the mince, herbs, onion and tomato puree together.

Divide the mix in to 24 meatballs and roll them, shallow fry, they take about 10-15 mins on a low heat.

Serve with pasta or spaghetti

If you want to make a different type of shepherds pie that’s quick and easy:

Put a layer of peas and tinned carrot slices in a casserole dish

Mash a tin of corned beef (don’t keep in fridge or hard to mash)

Spread the corned beef over the peas and carrots

Spread a couple of tablespoons of Branstons Pickle over the top

Boil and mash your potatoes

Cover the top with the potatoes, add a little butter on top

put in a hot oven until heated through and the top of the potato is crispy.
