Only had it a few times in Greece.... Disgusting stuff! I think the trick is in tenderising it

Oh god this is so so tasty! A whole one though

For my i like it cooked delicately butterfly'd thin slices,a very light milk batter with lime rind and chilli. Less is definitely more dont over complicate it

High heat show it to the pan for acouple of minutes. Any longer it needs to sit to retenderise.

I could never eat octopus - they mate once, are solitary creatures and of you have ever held one you will know how they look at you ..

Anyway I have seen octopus dipped in tempura and fried in very hot oil - that will keep it tender - served with lemon and lime or a garlic dip

I have seen an an old washing machine used to tenderise them in Turkey. The only time I have cooked one I did so in a spicy stew using a slow cooker to give it a long slow simmer, which sort of worked but it did still had some rubberyness to it.

Slow cooking unfortunately does usually rubberise it. Hot and quick is the key with it.

In Mexico we make a sort of ceviche with it- but use only the tentacles. You need to cook it first (as opposed to fish ceviche) and once cooked dice it and mix with chopped tomato, onion, coriander, serrano or jalapeño chili to taste, salt and lots and lots of lime juice. Serve with crackers. My mother used to make it very often... I don’t really. It’s tasty but somehow I’ve never seen an octopus in supermarkets/markets lol

The trick is not to over cook it. Done right, it’s delicious. Over cook it and it’s like chewing on rubber.

Literally.
