It can be a struggle to cut the outer shell off from such a soft cheese.....

I'll do a scoop action usually but it depends what I am eating it with and who with .... I find the outer shell palatable.

Cut off a piece and eat it all, together with other cheeses, thin slices of salami, chorizo and Italian or Spanish ham, on Ritz cracker or rye bread and a glass of red wine. Nice if you are not that hungry and don't want to cook a full meal.

Wildwood used to do a starter of baked brie, drizzled with honey, accompanied by whole cloves of roasted garlic, plus hazlenuts - and I certainly ate every last scrap of that. Though never without burning the roof of my mouth.
