"Omg everyone I didn't think I'd get a reply Thanks for the ideas and keep them coming please I added spring onions for the first time in ages this week and they were nice I'm going to grow a few bits n bobs to add I think, I love those peppery radishes" Spring onions..... how could I forget. Little tip ..... I do mine like this .... Take one spring onion. Remove roots and very top of green tips. maybe the outer green leaf if its limp. Take sharp knife go straight down the middle. Roll over ( the onion not you ) and do that again. Then make little cuts across all the way up. Lots of bits of onion to scatter through your salad. I'm not fussed on getting a fookin' big chunk of onion while im eating.

"Sounds bizarre but I make salad cakes! Yes cakes! High sided quick release cake tin. Line the bottom and sides with bread. Layer up with salad ingredients - shredded lettuce, cucumber, raddishes, boiled egg, grated cheese, greater carrots, few strawberries etc - until it fills the tin. Finish with bread to cover the top. Add a plate and weight it down. Place in the fridge for a few hours Release onto a plate and cover with cream cheese and decorate ( cress, flowers, grated carrot etc) Looks stunning at the table - slice and eat! " that sounds amazing

"I use fresh herbs and baby spinach instead of lettuce. Coriander, chives, lemon thyme, tarragon, mint, basil, oregano, celery leaves, anything to throw in and will add a taste explosion in your mouth. A splash of good quality olive oil, gin infused baby beets, olives, avocado, baby plum tomatoes, diced cucumber (deseeded), feta cheese ...mmmm " Your salad sounds delicious!
