I've discovered that most things I didn't like in the past was due to it being badly cooked. I used to hate mashed potatoes as I was always given it lumpy and unseasoned. Good mashed potato is lovely.

Aubergine is awful when it's not cooked well but can be delicious. Same with courgette, brocolli and cabbage.

Quite a lot of things really for the M side.

He used to be pretty anti-veg, just the usual potatoes, peas, brocolli.

Now pretty much eats everything except onions (won't), prawns (can't) and rare meats (won't)

Apparently it's an age thing from primitive times.

Kids are born with a sweet tooth and fussy tastes. This was to stop them eating wild berries/plants that may be harmful millennia ago.

Gawd, one of the best things I've ever eaten was parsnip & cauliflower puree, tasted incredible but apparently there was nothing in it but the veg & salt.

Also, now eat mild spice (before not at all), cabbage, sprouts, avocado, omelettes, gherkins.
