"4 oz butter 4 oz brown sugar Whisk together until fluffy 1 egg beaten and then blend into mixture 2 ripe bananas mashed up and add to mixture 8 oz self raising flour with a half tsp of cinnamon or mixed spice Fold into mixture then give it a good whisk. Pre heat oven to 180 degrees Pour mixture into a greased loaf tin. Bake for 30 minutes and test to see if it is baked through, I used a dry piece of spaghetti if it comes up with mixture on put back in oven for a couple more minutes until baked. Simple and easy. " I add a teaspoon of baking powder. I also put it in a paper case in a loaf tin.

"I was always told that you need to massage the banana until it was firm then insert it into a fur lined mixing bowl and massage further until the banana is well creamed in the bowl and gets soft, after that the recipe gets a little sketchy and everyone likes to finish it off differently " These sorts of intimate tips are exactly why I asked. Will ensure I thoroughly massage the bananas until firm, then creamed.
