Mr does brine a lot of meat for the bbq apparently very popular in USA and it is so moist once cooked.

Latest was a sticky bbq beef short rib with Jack Daniels in the sauce ,absolutely fantastic it was

I can see that working really well, because the salt will preserve and mature the meat at the same time, so you'll have plenty of flavour and moisture.

My own preference would be a very thick ribeye smoked and reverse seared over charcoal. Seasoning: salt, pepper and garlic powder.

That sounds delish, my pak chois are still growing, once they are ready to harvest, I will do some amazing stir fries

Speaking of which, I need to rub my meat with some proper seasoning. Need to marinate it for tomorrow's lunch. Its nothing fancy, just pork shoulder steak.
