If it’s lamb I put some thyme, grated carrots, red onion, grated courgette, grated parsnips and red peppers, fry it all off, drain off fat, cover with water and simmer, add stock cube and flour to thicken, mash on top, grated cheese then in oven for an hour

Dubai & Nottingham

Never made this... but if I did I’d guess and fry mince meat and some onion, mix in boiled carrots, peas and beans, and a stock cube, possibly add fresh rosemary? Or Thyme? Salt and pepper. Give it 15-20 then into an ovenproof dish, add a layer of mashed white and sweet potatoes and grate cheese on the top. Would probs do it in winter and add parsnips etc

Cottage pie is beef, shepherd's pie is with lamb. I always add cheese, double cream, chives and creme fraiche to my mash because if I'm doing it I'm going all out. A good base is really important (sweat down those carrots, celery and onion) and some very good stock as well. If I'm feeling extra fancy when I'm making cottage pie I use freshly grated horseradish in the mash for that extra kick.

Bolton

Mince lamb, carrots, onions, peas, tinned tomatoes, red wine, mint, rosemary. The mash will have eggyolks, milk, salt and pepper.

I strain all the juices from the meat as i make the pie, and make a very thick dark gravy with that. Sometimes put a teaspoon of blackcureant jam, and yet more wine in the gravy.

I like gravy!

I just use mince, onions and mushrooms, with a dash of mustard powder added to the gravy. And plenty of cheese on top of buttery mash

In the middle

One white onion finely chopped, 5% fat minced beef as I like it lean, once they are fried off and the beef has browned and broken down (hate the stringy worm look), add plenty of salt n pepper and thinly sliced mushrooms, fry for a bit longer then add 5-6 stock cubes to the dry fry, let it all mingle together before adding thinly sliced carrots and covering with boiling water, a dash of Lea & Perrin’s and a squidge of tomato purée, let it slowly simmer for a few hours. Par boil fluffy white potatoes and mash with butter, milk, stir in loads of Monterey Jack cheese or cheddar into a nice smooth cheesy mash, throw it all in a dish top with the mash and cook in the oven for 45 mins or until golden brown and bubbling, spoon over the left over gravy and shove it in your face

Had it for tea last night and was delish
