I'd love a vanilla sponge with raspberry jam and vanilla buttercream and then loads more buttercream plonked on the top.

It's a cake two of my family members just make smashing good..

It's called dacquoise.. in their version the meringue layers are baked with a bit of demerara sugar and chopped dates.. cream which goes in between is made of caramel condensed milk, whipped cream, mascarpone, chopped walnuts and dates. Its divine. X

But anything with meringue would do.. like chocolate buttercream and morello cherries.. .

I (her) love love love cake.

My least favourite is chocolate, everything thing else I adore.

Previously I had a birthday cake made for me and it was a large battenburg cake... I so did not want to share it x

Wirral

I do a 1970s light fruit cake with really brightly coloured fruit: glace cherries, papaya, mango bright as jewels in the golden cake. It needs a bit of angelica to give it the full 1970s taste but that's really hard to find now.

Otherwise I do a sponge cake with earl grey and lavender.

If it's shop bought then I want a rainbow cake because I can't be bothered putting the effort in to make that myself!
