It’s lockdown I know

So let’s have your best home cooked recipes

Simple, adapted or made from scratch..

Come on let’s show everyone how to cook and enjoy

Quick Satay..

Peanut butter(smooth is best)

Olive oil

Pinch of salt

1/2 cup of water

Tomato pastas

Ketchup

Chile powder

Fresh chilli if you have it

Garlic purée

( finely chop chilli)

2 x Heaped table spoons of peanut butter

And good cap full of olive oil

Heat gently in frying pan

Add water to make smooth paste

Add tomato pasta not too much a glob of ketchup.. slightly sweetens it.

Chilli powder, salty ,garlic purée and

Fresh chilli’s

Stir constantly Simmer and let sauce thicken if it gets to thick add a little water.

Done cheap quick satay sauce

Homemade kebab!

Lean beef and chicken sausage keeps the fat content too.

250g beef

250g lamb

4 chicken sausages

1 onion

2 cloves of garlic

2 tsp cumin

1 tsp smokey paprika

1/2 tsp coriander

1 tsp oregano

1 tsp mixed herbs

1/2 tsp cayenne pepper

1/4 tsp hot paprika

1/2 tsp marjoram

1 tsp salt

1/2 tsp black pepper

1/4 tsp bbq seasoning

1/4 tsp smokey Cajun seasoning

Blend the meats so they’re all minced together, blend the onion and garlic to make a sauce, pour in and add a splash of oil, add the spices/herbs

Bake for 1hr 20mins in a dish covered with tinfoil, uncover and bake for 10 mins to crisp the top.

It took a bit of tweaking to get this recipe right, but this is unbelievably good.

It’s even better if you leave it and allow the juice/fat and oils to solidify around the bottom of the meat.

Quick bbq sauce for pulled pork ribs etc or even hunters chicken

500g passata

5 tablespoon worcester sauce

3 tablespoons of balsamic vinegar

2 garlic cloves crushed

1 teaspoon mustard powder

3 tablespoon of sweetener or sugar put in a pan bring to boil
