Fry the onion, garlic & ginger in a little olive oil, add the veg and tuna and maybe any additional spice of your choosing, chinese five spice is a good one. Chuck it on a bed of basmati rice and you're sorted.

Shove the leftovers in the fridge and it tastes even better warmed up the following day.

Not done it with beans although I did stir in grated cheese only this week to try it
