how do i know when diced lamb is done in a pan and any tips on cooking it

diced lamb,,depends on the size of the dices mate,,take one out and slice it open,if its a small one and others are bigger then leave for a few mins,

Make sure the pan is hot enough to sear the lamb, it seals all the juices in fast then. Use a mix of oil and butter to give it a bit of flavour.

Or you can put some flour and seasoning into a polly bag, put the lamb into it and shake it about to coat the lamb, this also seals it and gives it a bit of a crust, also useful if you then want to add stock and stew it as the flour thickens the gravy.

Don't keep prodding and poking at the lamb pieces, give them time to cook and properly seal, it should move easily once the surface has cooked then you can toss or turn the bits.

Lamb cooks very quickly so we are talking minutes here, unless you are going on to stew it or casserole it.

im doing a lamb curry but never cooked lamb before. so just cook it till its cooked through

yep,just make sure it is cooked,and remember,that if you are putting the lamb into a pan with the curry,it will cook some more

I believe the meat would need to be slow cooked until tender, otherwise they will be very chewy!

Length of cooking is dependent on where the meat comes from.

Leg will take a lot longer to become tender when compared with the neck or the breast.

Yep, sear the meat only and make sure you just simmer it gently in the curry sauce, don't whack it up high heat it or it will end up like string.

Well done!

Hope you cooked extra so that you can freeze the rest for laters.

That's what I do, cook a big pot, portion into tubs, then freeze until required. Just need to boil some rice and bingo, a nice meal on a plate.

They beat supermarket ready meals for certain!
