Baking disasters?

Has anyone been baking/cooking way more than normal during the lockdown? Is it restaurant worthy or fit for the food recycling bin ? I attempted a simple banana loaf yesterday which was grim , D likened the texture to a tempur mattress

The way flour and yeast have run out up here, I think yes, a lot more people are attempting to bake/cook.

I'm going to make cherry and white chocolate scones later, I'm an okay home cook so they'll turn out fine.

I can't bake to save myself, I once failed to make a cake with a packet mix-twice!!

Luckily my neighbour is baking and leaves me cake parcels at my door regularly.

Did manage to make a banana cake and two Bracks yesterday, just pondering what to make today, have 500g flour left,

That’s a shame I love making banana cakes.

I prefer to bale through the night when everyone’s in bed. My only disaster so far has been a batch of small IPA bread loaves that came out resembling coal when the smoke alarm woke me up.

whenever my husband makes it for us we seem to have the opposite problem, it's too soft and can fall apart too easily.

Been baking like a muthafucka taking cakes in to work. Made a bristol stools chart cake recently, which is basically a poo guide used in the nhs.

Issues at mo, shortage of flour in the shops...

I roll them out and cut them then put them in the fridge for an hour before baking. I found it helps them keep the shape and not spread.

Also I’ll roll the dough and cut them then I’ll roll again and cut more but that’s it, I don’t roll the same dough out more than twice.

It takes a few goes to get it perfect, I have loads of different shape cutters but with the exception of Xmas theme, I normally use my crinkle cookie cutters. Also prick them slightly with a fork before baking so they have those little holes for the heat to escape.

I have mine set for 160 and I cook for 12 minutes without checking then I’m looking through the window every minute for about another 3 mins, I don’t like them when they’re brown around the edge. I like them looking white still. They’ll harden up when they’re cooling.

FWIW, overcooked brownies make the most delicious healthier tiramisu.

Crumble the over-dry brownies and pour over a double shot of espresso and a decent slug of sherry (amaretto is beyond heavenly if you have some) for as long as you can bear it (20 mins absolutely minimum, overnight if you're that organised.)

Cover with plain yogurt, and sprinkle some cocoa powder to decorate.

Necessity was the mother of this particular invention, but it's now a regular treat.

Made Overnight Marmite Loaf last week using a Country Grain flour, purchased flour about a month ago.

Today, Banoffe Pie. Very yummy. Only "problem" is that I have to eat it all myself. Being single occasionally has it's positives!

There is a considerable knack to that

I could never make it right under the glare of my mother at home as a teen, but once I left home and had time to think, I mastered it.

Equal amounts of butter and cornflour to make a roux - don't overdo the butter melting and take it off the heat to stir in the cornflour.

Add the milk, always, always stirring. Whilst stirring, add grated or finely chopped cheese and never stop stirring!

I can't give amounts/quantities because I do it by eye

Burnt dog - yuk! Lol. I thought wet Labrador was bad enough.

Sympathies for your frustrations - we all burn things sometimes, but it's no consolation
