First weekend of July

So turns out I have July 8th off work and I'm looking for something to do during Saturday the 6th, Sunday the 7th and possibly Monday the 8th, also turns out I that my housemate is away that week so I have the place all to myself.

Looking for suggestions on what to do with myself be it in Waterford or somewhere else in the country.. All suggestions are welcome
