Pay them either way cash, card or cheque as long as I've proof of what I paid and invoice for the work carried out it's up to the trades men to declare whatever he wants.

E.g If you and the customer don't keep a record of the money or the work carried out let's say for example you fitted a washing machine and you messed you the plumbing and the wee woman's house gets flooded. Who's to pay the damages?

I've always been paid with money, never been offered any other payment options unfortunately
