Spring onions, chopped tomatoes and small pieces of pancetta, stir-fry these and then I add two whole eggs to this, but only mix the egg whites through, leaving the yolks whole until the rest is cooked, and just before serving, I mix in th yolks .. Voila my favourite scramble eggs

I haven't been able to turn Mr's head yet, he still likes his dippy egg with toast soldiers! With salt & pepper.
