Check in the night before and look for a late check out.

Commons Inn just outside the city has parking at the rear, it is 20 - 25 mins from mallow, though, may not suit you location wise.

There is also the Springfort Hotel just off the road between Mallow and Buttevant.

The Charleville Park Hotel is big enough to be discreet just by being so busy.

Just to point out the hotel is not discreet if you are shagging a staff members wife. Just saying.
