Kaiser's 40 days without coffee #9

We're heading back West today, stopping in Constantinople so today you miss Turkish coffee...

Pounded or ground to a fine powder, the coffee is added to warm water & heated gently until it boils, removed from the heat & sugar added & stirred until the sugar is dissolved, return to a medium heat (but stop stirring or the foam will be ruined) until it reaches the boil. Repeat this final stage a couple of times then pour, trying to get a thick foam on top.

A Hookah is optional but I'd recommend the spicy apple flavour.
