Dublin/westmeath/kildare

Lightly toasted bread rubbed with garlic and topped with sun ripened tomatoes with a dash of virgin olive oil, pinch of salt and smidge of fresh basil.

Flame grilled chicken on the bone with a spicy dry coating on it.

Buttery mashed potatoes with salt, pepper, parsley, nutmeg and dash of milk.

A thick cheesy sauce lapped over cauliflower (al dente not mush from weddings).

Dessert ginger or champagne sorbet.
