It's made from potatoes and flour. Two different types.. One is grated raw potato which has all the moisture squeezed out, mixed with cooked mashed potato and flour. Made into dumplings and boiled. Eaten straight out of the pot or sliced later and fried. Mmmm! Type two is just raw grated potato and flour, fried Meh. It's nice with a fry up but not as good as the boiled boxty. It used to be common all around the north west and north ish, but has died out in most places at this stage. It looks awful but tastes heavenly! Ah, nostalgia!
