The West

What's a meal you love that you can whip up in a jiffy after a long day.

Bonus points if it can feed a family.

Naas which is South West of Dublin

Couscous left soaking in boiling water with a chicken stock cube while you stir fry chicken and/or bacon and onions, add frozen (thawed) mixed vegetables, dump in the couscous, mix and fry it all together, season to taste, I use freshly cracked pepper and Soy sauce.

Personally I like to add Chinese five spice or Thai seven spice to the chicken while cooking but whatever takes your fancy……😋

Scrambled eggs on nice toasted bread. Ready in about 4 minutes. Or pasta aglio e olio, which is basically spaghetti, garlic, oil, chili flakes topped with a generous helping of parmesan.
