Naas which is South West of Dublin

Rooster potatoes, simmered slowly in their skins till almost done then drain the water from the pot and cover allowing the potatoes to finish cooking and to dry in their own heat, then peal, add butter milk/cream, salt and pepper and mash, perfect on any day of the week…..
