Where in Kerry will you be based?

Last time we went, we ate in a place called Jack's Coastguard restaurant in a small village called Cromane.

It was a bit expensive but food and service was fantastic.

Other than that, any recommendations would be location dependent and what activities you're into.

Jack's of Cromane is a great suggestion, while you're in that area check out the Conor Pass as well. Stunning scenery and a few spots to stop in for a pint. You would need to rent a car for that trip. If you're on foot then killarney, muckross Park and the gap of dunloe are all accessible by bus or coach.
