Havent been out in sligo for a few years but main decent pubs are

Fiddlers creek , Walker 1871, the bourbon. Not sure what's open as lot closed with staff shortage due to covid. Food wise Hooked, Fiddlers Creek or Eala Bhan but all closed by 8pm
