What do you say to a person after they reply to a hello in order to start a conversation. I usually say how are you? But that doesn't seem to work.

Read the profile you are messaging and see if you can get something relevant from that.

Would you just say hoe are you to someone in a bar? Or would you say this is a great/crap place, how are you finding it? Or somesuch thing
