My profile was set up as woman but had changed to couple somehow. This is not the case. Does anybody know how to change it back?

Only Admin can change the profile type and it has probably been changed to a couple's profile as part of your profile text says - "Also play as a couple with xSDx"

Only Admin can change the gender, in this case MF couple, of a profile.

If you think they made a mistake in changing this profile then hit the contact button, bottom of page or bottom of home page on mobile, and ask them to change it back.
