Anyone know why some of my Sent Messages are still showing 'Unread' status when I know they have been read and replied to?

I'd guess that the other party has used the "Mark as unread" function, after they read and replied. Possibly so that they could then use the "Delete all read" function to get rid of all the messages that they weren't interested in?
