I've had people on my friends list for a while but have no interaction with them. If I delete them from my list will I still be on theirs so can see my posts etc?

No, if one of the friends removes it from their list they are no longer friends so updates wont show on the 'friends update', although you would still see it on the 'local update' if that applied
