If I block a person, will they still be able to see my photos that I post on the update page & also in my gallery? Basically everything!

No. If blocked they can't see your profile and you won't show in their updates.

If I blocked someone and deleted their messages anyway to get them back regretting doing it and need to try contacting them

You can't get the messages back but you can unblock them...As long as they haven't blocked you.

If a person is blocked, and they upload new photos and are set public, they can still be seen in new photos....

You can still see if a blocked person has been online. It shows 'last online 5 hrs ago' if you have a message they previously sent you or vice versa

Not if they have blocked you. As you are unable to see their profile at all

Incorrect. If you have their last message still in your inbox or sent messages you can click on that and you can see the last time they logged online and when they are currently online. And vice versa.

You can also see their profile pic and when they were last online from your blocked list.
