deleting messages

Is it possible to delete messages but keep it as unread on receivers end. Noticed in my sent folder there's messages from weeks ago waiting to be read even though the user is active

Any messages which you have sent and which have been deleted would show as 'deleted' in your Sent Items (regardless of whether they were read-and-deleted or deleted-unread).

However, you shouldn't make any assumptions from the fact that your message hasn't been either read or deleted. People all use the inbox system in different ways.

My advice would be: don't even think about what's in your Sent Items.
