When we created this profile, we made sure we put both sex's down along with age, build and interests, now we see its just for one? Why would admins do this? We have concerns about this.

It might have been a mod that moved the thread, and not the Admin.

They have a life outside FAB just like anyone else, and are not on FAB 24/7, so a bit of patience would help.
