When you block someone who's verified you does it remove the verifications?

No, but your verification is no longer visible.

So if user X has been verified by one woman, me, and I block him. The text of my verification and the fact that "_naswingdress" verified him will vanish, but "verified by one female" will stay in the summary

Yes. The summary number doesn't change but you can no longer display the verification.
