deleting sent emails

if I email someone and delete it before it is read - is it still seen by the recipient?

if you mean a message you send on here the recipient will still be able to see it

Yes it will still be seen you’ll just be unable to see if it’s been read or deleted by the recipient

You can’t unsend a message once it’s been sent

If you mean an actual email then the answer is yes. The same as all forms of post, once it is sent you cannot get it back.

You can recall an unread email with certain providers. I've used it a couple of times and the wait for the message saying it's successfully been recalled can be excruciating

If you send a message to someone who's not been on here for a while, after 3 weeks it disappears from my sent file

Does it remain available for the person I sent it too?

For some email services such as Google they offer an unseen option for up to 30 seconds it’s not actually recalling the message as once it gets delivered to the recipient you’re pretty screwed.

Message recall only really works within corporate email deployments such as exchange and O365
